Photo cred Cat Oh I love hummus. Hummus, hummus, hummus.  I just learned a few things about this original prepared food. First of all, hummus is the Arabic word "chickpea". And if you go back to Socrates and Plato days, you'll find that they even wrote about it cause the shit is so damn good. Good for you with all its iron, vitamin C & B6, fiber, protein and potassium. I have to say it's perfection and it is (and always has been my desert island food - you know that game of "if you were stranded on an island with one thing what would it be?"). We introduced a new salad today, the Baouleh Baouleh and it came with a creamy hummus dressing. Hummus combined into a salad dressing? I'm in heaven. So here's the recipe for all you other hummus lovers out there. 2 cup cooked chickpeas 1/4 cup water 1/4 cup lemon juice 1 tbsp tahini 2 garlic cloves 1/2 tsp mineral salt 2 tbsp olive oil Blend'er up & enjoy.

burrito Lisa inspired me yesterday with her gorgeous delivery salad wrap that I thought I'd make a version for dinner.  It really got me thinking about the uselessness of tortillas in a burrito.  All those white processed carbs & gluten just make me soooo tired and then if that's not bad enough, it then makes me crave pure sugar which in turns makes me feel sick.  So why bother when you can use romaine lettuce leaves instead. Pack those suckers with all the lovely fillings of a burrito and away you go.  Dinner last night was a revelation and it may just be an encore performance tonight.  Yes, they were that good and super easy. The Big Up Your Styles Burrito 3 large romaine lettuce leaves 1/4 cup hummus (or more if you want) Sauté onions & peppers & mushrooms in coconut oil (with garlic, onion power, cumin, sea salt & pepper to taste) Sliced avocado Salsa Layer all the fixing on top of the lettuce leaves and roll them up.  Have as many as you want - these little guys are solid gold. Yum!

photo cred Cat My recent Parker's PolkaDot Party (The Triple P) was such a blast and the food was so good that I thought it only fair to share a few fab recipes. My GF, Leith, made this crazy-delish dish which I personally devoured.  She found it on Pinterest and then modified it to be vegan/non-dairy with a gluten-free option.  Talk about inclusive food. The LM Dip Supreme 1 1/2 cups vegan, gluten free hummus 1 cup non-dairy tzatziki (recipe below) 1 cup tomato, diced (mix with 1 tbsp lemon juice) 1/2 cup cucumber, cubed 1/4 cup red onions, diced 1/4 cup kalamata olives, chopped 1 handful fresh oregano, chopped 4 whole wheat pitas, cut into triangles OR gluten-freecrackers/rice crackers (for celiacs) Optional: 1/4 cup goats-milk feta / organic feta (crumbled). Good for those who like dairy but can't have cow's milk.  And I didn't even see the cheese as it was on the side, so please believe me that it doesn't make the dip. Assemble dip starting with the hummus and stacking each ingredient on top of the last. Tzatziki Recipe 1 1/2 cups plain soy yogurt / or plain organic yogurt 1 cucumber, grated and well drained 2 cloves garlic, minced 2 tbsp lemon juice dash of pepper sea salt to taste 1 tbsp fresh dill, chopped 1/4 tsp paprika Mix together by hand, and layer with ingredients above.
