photo cred Cat This is going to be the easiest blog entry ever.  In short was responsible to provide dinner for 4 this past Saturday night. Had 2 extra salads from The Goods so I mixed them up, divided by 4, grilled some gorge fresh wild salmon and Bob's your Uncle. I looked like a culinary goddess (it was for some out-of-towners so didn't have to mention that Lisa actually made them - they didn't' ask, I didn't say), I was happy knowing that beautiful food was being served and best of all - Zero preparation. So with warm nights and dinner parties getting underway - make it easy for yourself. Order a couple of salads - pick 'em up at MISFITSTUDIO, (if we don't already deliver to your office) and serve them as a glorious side to whatever floats your boat. Or even easier, just order everyone their own salad and you'll have even less to do. Yessssss, my kinda meal yo.

photo cred Cat What the f*** am I going to eat for dinner? I don't want anything heavy or complicated but I want it healthy. Oh I'll have an omelette but I only have 1 beautiful organic egg... BUT I do have the following in my fridge (thank you MamaEarthOrganics): Asparagus and spinach. And there you have it. So damn delish, it may be my new go-to. Oh and little one sat on my lap and popped the asparagus bits in her mouth while I ate. Riiiiight? All you need: 1 organic/local egg Organic Asparagus diced - as much as you'd like Organic Spinach - handful Pink Himalayan salt - dash Fry up the asparagus for 5 mins, then add spinach for the last minute then crack an egg on top and mix it all up until the egg is cooked. Slap it on a plate and sprinkle with Himalayan salt. Easy-peasy.

So the lovely Meej & Niall had their baby shower over the weekend. I was on the hook to bring some food. I hemmed and hawed over what to bring then my Mother's voice filled my head. "Make it easy for yourself. Don't make a whole bunch of different dishes, just make one really big one." So guess what I made? Ahhh yeah, good 'ol pesto pasta salad but with a healthy twist. Rice pasta instead of reg pasta, Best Pesto Ever, a whack load of yellow & red peppers, fresh sundried tomatoes, and kalamata olives. The beauty of it - you can add whatever you want in whatever quantity you like. This was such a hit and so easy to make that it should be everyone's go-to potluck dish.

LL + Gosi Always Ugh I love my Gosi Bear, she hosted date night this week and after enjoying the delicious dahl she made from scratch, she then magically whipped up an amazing sweet popcorn. Move over Buckie's lemon poppy seed loaf, this is all I'll ever need. Lemon Poppy Corn 1/4 cup organic popping corn 1-2 tbsp sweetener - i.e. xylitol, coconut sugar 1 tbsp olive oil 1 lemon juice and zest (2 tbsp juice) 1 tbsp poppy seeds dash mineral salt Mix oil, sweetener, juice and zest in small bowl. Air pop the popcorn and toss with zesty lemon goodness and sprinkle poppy seeds and a touch of mineral salt. For more Polska popcorn magic, see Gosi's Dilly Kaz Corn recipe. photo cred Cat Are you ready for this?  Best kept secret. Aroy-D Red Curry.  Seriously. It's $1.99 and it's awesome.  Introduced by my BF "Kale" waaay back this stuff never fails. Add whatever tickles your fancy but Lisa and I love adding every veg under to stars and 1/2 a can of organic coconut milk (for every can of red curry). Then make some lovely brown short grain rice and Bob's your uncle. No need to add anything else. There is nothing artificial in it. All real ingredients. Do yourself a favour and try it out. Cheap, delish and easy. Does it get any better?
