Technically a fruit, did you also know that in Brazil avocados are viewed more like a sweet treat (with sugar added to them) rather then a savory treat like us North Americans tend to view them (ie. like guac or a lovely companion to the salad)? Either way, I love 'em. Who doesn't. So here's what I made today in honour of them. Fiesta Avocado Salad 1 cup org. corn 1 cup cooked black beans 1 cup org. cherry tomatoes 2 avocado diced 4 tbsp fresh lime juice 3 tbsp hemp oil 1 tsp cumin Himalayan salt & pepper to taste Combine in a bowl and add more or less of any of the above ingredients as it changes for me every time I make it. Yum.

Power Salad Road trips with a cooler packed full of good treats is awesome, but what's even better is diving into your bowl of delicious homemade delights while the schlep beside you gnaws on their complementary airplane food. I'm telling you, it's one of my favourite parts of flying. I was in Vancouver over the weekend for the wedding of two lovely friends and was sure to pack a lunch both ways. Bring simple things like avocado, cooked quinoa, some cherry tomatoes and grapes or if you're really organized make a big salad. Even the goods' muesli is a great travel companion, just ask for hot water in flight. There are times to indulge and plane food isn't one of those times. Just remember, pour your dressing on before you go through security, then liquid rules don't apply. Enjoy your holiday travels and eat well.
