Did you know that January is Avocado month, not officially, but it’s when these little devils are in seasons. Technically a fruit, did you also know that in Brazil avocados are viewed more like a sweet treat (with sugar added to them) rather then a savory treat like us North Americans tend to view them (ie. like guac or a lovely companion to the salad)?
Either way, I love ’em. Who doesn’t. So here’s what I made today in honour of them.
Fiesta Avocado Salad
1 cup org. corn
1 cup cooked black beans
1 cup org. cherry tomatoes
2 avocado diced
4 tbsp fresh lime juice
3 tbsp hemp oil
1 tsp cumin
Himalayan salt & pepper to taste
Combine in a bowl and add more or less of any of the above ingredients as it changes for me every time I make it. Yum.
