Lime Lentils

A quick and really good for you dinner idea with lots of protein, thanks to the kale and lentils, for my fellow dog loving, veg friend Steph…. for an added kick of extra enzymes you can sprout the lentils ahead of time, click here for instructions.

Lime Lentil Salad

1-1/2 cup lentils, cooked and/or sprouted
1/2 cup sprouted buckwheat (optional)
1/2 lime, juiced
1 yellow pepper, chopped
1/2 cucumber, chopped
5 leaves of dino kale, chiffonade
1/8 cup red onion, minced
1/4 cup dried oregano
1/8 tsp+ chili paste
1/4 cup cold pressed olive oil
mineral salt and pepper to taste

Mix together by hand and serve with a slice of lime! Make double batch and keep in the fridge for a quick lunch option.
